Recipe: Almond and coconut energy bars
Snack time? On the go and need an energy boost without the sugar?
Today we are sharing the recipe for one of our favourite homemade snacks. No baking involved and super easy to make, they very often find their way into the Babease HQ kitchen but they never stay for long!
These tasty little bars are a great source of omegas, calcium, iron and vitamin E. If you have time they work just as well rolled into balls and look pretty too. Either way they taste great!
Prep: 7-10 minutes
What you need
- 250g almonds
- 250g pitted dates
- 2 tbsp raw cocoa
- 2 tbsp desiccated coconut
- 2 tbsp flaxseeds
- 1 pinch of salt
What to do
Pop all the ingredients into a food processor and blitz until well blended and the mix comes together when pinched. If a little dry (dates can vary in moisture) add more dates and blend again until you get the desired texture.
Roll into balls or press into a lined tray, then chill before cutting into bars.
Store in the fridge for up to 2 months.
