🧊If there are leftovers then freeze in an ice cube tray for little lunches later in the month.
🐟To bulk this meal out to ensure there are leftovers for another day, just add a portion of fish to the top of the risotto after you have added the cheese then pop it back into the oven for another 8 minutes for perfectly cooked fish and risotto!

 

INGREDIENTS

  • 1 Babease Vegetable Risotto
  • ½ onion diced
  • 1 celery stick diced
  • ½ butternut squash cubed
  • ½ courgette grated
  • 250g risotto rice
  • 100g parmesan cheese
  • 600ml no salt vegetable stock, hot
  • Olive oil

METHOD

  • 1 Put the olive oil in an ovenproof dish then add all the other ingredients other than the parmesan
  • 2 Give it a good stir then pop on a lid or cover with foil and into the oven for 20 minutes at 180°C
  • 3 Take out of the oven and stir in the parmesan, pop it all back into oven for another 5 - 10 minutes until the rice is lovely and soft
  • 4 The risotto will be perfect for mashing or serve just as it is
