INGREDIENTS

  • 1 Babease Keralan Vegetable Curry
  • 250g lentils (such as red or green lentils)
  • 1 carrot, chopped
  • 1 red onion, diced
  • 1 celery, diced
  • 2 garlic cloves, minced
  • 1 knob of ginger, grated
  • 1 tablespoon olive oil
  • 1 tin of coconut milk
  • 1 teaspoon curry powder
  • Handful fresh coriander (optional)

METHOD

  • 1 In a large pan, heat olive oil over medium heat. Add the chopped onion, carrot and celery. Cook until soft for about 10 mins then stir in the ginger and garlic. Cook for a few minutes until slightly tender.
  • 2 Add the lentils, Keralan Vegetable Curry, coconut milk, curry powder and stir well to combine. Simmer the mixture over low heat for 15 minutes until everything is lovely and soft. If it needs a bit more liquid, then add some water.
  • 3 This can be eaten just as it is or with a dollop of yoghurt; it is really easy to mash or puree for a smoother texture.
