MEGA MINI BEAN CHILLI

This recipe can be topped with an egg for a delicious brunch or turned into flavour-packed burritos for lunch.
It's weaning-friendly for little ones and super-scrummy for adults too. 

TOP TIP

❄️This is a great one for the whole familv so batch cook and freeze.

👨‍👩‍👧‍👦For adults in the house, just remove portions for your little ones and then season the rest for the grown ups.

🌶️For those with fiery taste buds, add in a touch of mid chilli powder or if you want a softer texture then simply replace the beans with red lentils.

INGREDIENTS

  • Babease Stage 2 Mexican Bean
  • 1 carrot
  • 1 onion
  • 1 celery stick
  • 2 garlic cloves
  • green pepper
  • 1 courgette
  • ½ butternut squash
  • ½ tin kidney beans
  • ½ tin chickpeas (tinned in plain water, not salted water)
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp cinnamon
  • 1 carton of passata
  • Olive oil

METHOD

  • 1 Sauté all the diced vegetables in a little olive oil for about 10 minutes until they are nice and soft then add the drained beans
  • 2 Add in the spices and allow to cook for another 2 minutes before adding in the passata and Babease product
  • 3 Cook at a simmer for 20 minutes then serve with rice and sour cream or yoghurt
