INGREDIENTS

  • 400g diced lamb
  • 1 tin of tomatoes
  • ½ onion, diced 1 tbsp tomato puree
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1 garlic clove, crushed
  • 200ml no salt stock
  • A handful of fresh coriander
  • 6 apricots, diced
  • Full-fat natural yoghurt, to serve
  • Couscous, to serve

METHOD

  • 1 Seal the lamb in a hot pan with a drizzle of olive oil, then pop it into the slow cooker.
  • 2 Soften onion and garlic in the same pan, then add to the lamb.
  • 3 Pop everything else in the slow cooker and give it a stir. Leave to cook for 2 hours on high or 4 hours on low. Alternatively, if you do not have a slow cooker, just cook the dish in a pan that has a well-fitting lid, and leave it to simmer for 2 hours before checking the meat is lovely and soft.
  • 4 You can flake the meat easily for little ones.
  • 5 Serve with rice or couscous and a dollop of yoghurt.
