Mini Koftas and Roasted Veggie Cous Cous

INGREDIENTS

  • MAKES 2 ADULT AND 2 CHILD PORTIONS
  • Kofta Ingredients:
  • 300g lamb mince
  • 1/2 onion
  • 2 garlic cloves
  • Small handful of fresh parsley
  • 1 tbsp dried mint
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tbsp tomato puree
  • Olive oil, for brushing
  • Greek yoghurt, to serve
  • Lemon juice, to serve (optional)
  • Cous Cous Ingredients:
  • 150g couscous, dried
  • 150ml boiling water
  • ½ yellow pepper, finely diced
  • ½ red pepper, finely diced
  • 1 small courgette, diced
  • A small bunch of mint, finely chopped
  • 30g bunch of parsley, finely chopped
  • Juice of ½ lemon
  • 2 tbsp olive oil

METHOD

  • 1 Begin by roasting the diced vegetables in the oven until soft (180 degrees for 20 minutes).
  • 2 Whilst the veg is in the oven, blitz the onion, garlic, parsley, mint and spices. Mix together with the mince and tomato puree. Shape into little sausages and pan fry or pop in the oven at 180 degrees for 15 minutes.
  • 3 Place the couscous in a bowl and pour over the boiling water, then cover and leave to absorb the liquid. Fluff up the couscous using a fork, then add the roasted veggies and the remaining ingredients. Stir through to combine.
  • 4 Plate up and serve with a dollop of greek yoghurt and a squeeze of lemon juice. Enjoy!
